Prosciutto Rolls

  • 1/4  cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon fresh lemon zest
  • 6 ounces gorgonzola cheese, room temperature
  • 6 ounces cream cheese, room temperature
  • 16 dried Mission figs, quartered
  • Freshly ground black pepper
  • 1 bunch baby arugula
  • 12 thin slices prosciutto
 Stir together the oil, juice, zest and cheeses.Spread a light layer on a slice of the ham.  Add a piece of fig and a sprinkle of pepper.  Top with a few arugula leaves and roll up.Chill and cut into bites.
