Marilyn's Barbecued Spareribs

  2 slabs baby back ribs The Rub:
  • 1 tablespoon smoked paprika (sweet)
  • 1 tablespoon kosher salt
  • 1 tablespoon brown sugar
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
 Mix together all of the ingredients.  Lightly brush the ribs on both sides with vegetable oil.  Rub both sides of the ribs with the rub.  Place in a shallow dish and cover with plastic wrap.  Chill for at least 2 hours or as long as overnight. To finish:Brown both sides of the ribs on a hot grill, turning once, just until golden brown.Wrap each separately in 2 large sheets of heavy duty foil, sealing the edges securely.Return to indirect heat on the grill with low to medium heat.  (Grill should be 300 to 325 º F.)  Cook for 2 1/2 hours or until meat is fork tender.Meanwhile, make the barbecue sauce.  When the ribs are ready to serve, put them on a platter and drizzle with sauce.  Pass the remaining warm sauce.Serves 6 to 8.
