Fool Proof Pecan Pie

  • 28 caramels
  • 1/2 cup water
  • 4 tablespoons butter
  • 2 eggs, lightly beaten
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup pecans
  • 9” unbaked pastry shell
 In a double boiler over simmering water heat together the caramels, water and butter until the caramels are melted.  Whisk until the mixture is smooth.Whisk in the eggs, sugar, salt and vanilla.Stir in the pecans.Pour into pie shell.Bake in a 350 º F. oven  (in bottom one-third of oven) for about 1 hour or until set and puffed on top.Cool.
