Spicy Sweet Potato Casserole

·         4 large eggs, slightly beaten
·         2 cups milk
·         1 cup heavy cream
·         1/2 cup dark brown sugar
·         1 teaspoon allspice
·         1/2 teaspoon cloves
·         1 tablespoon grated fresh ginger root
·         1 1/2 teaspoon salt
·         1/2 teaspoon cayenne pepper, or to taste
·         6 cups shredded raw sweet potatoes
·         2 tablespoon butter, cut into small bits

Whisk together the eggs, milk and cream.
Stir in the sugar, allspice, cloves, ginger root, salt and pepper.
Stir until well mixed.
Fold in the potatoes.
Butter a 13 x 9-inch shallow baking dish.
Pour in the mixture.
Dot with the butter.
Bake in the center of a preheated 350 degree oven for about 1 hour or until puffed and golden brown.
Serves 8 to 10.
