Potato Cakes

  • 2 cups cold mashed potatoes
  • 1/2 cup flour (or finely crushed saltine cracker crumbs)
  • 2 tablespoons baking powder
  • 2 beaten eggs
  • Pepper and salt, to taste
 Combine all ingredients.  Form into small patties and fry in vegetable oil until browned on both sides, turning once.
