Zucchini Pizzas

  • Large Zucchini, halved, seeded and cut into 1/2” sliced


  • Flour


  • Eggs and milk (1 tablespoon milk per eggs) beaten together


  • Cornmeal


  • Oil, for frying


  • Pizza Sauce


  • Shredded cheese, Mozzarella, Cheddar, etc.




Dredge the zucchini slices in flour


Dip into the egg mixture. 


Roll in cornmeal to coat.  Fry immediately in a couple of inches of hot oil (at 365 to 375 °F.)  Drain on paper towels.


Place on a baking sheet and with pizza sauce, then cheese.


Bake for 15 to 20 minutes in a preheated 350 °F. oven.  Serve hot.
