- 2 cups sugar
- 1 1/2 cups oil
- 3 eggs
- 2 teaspoons vanilla
- 2 1/4 cups flour
- 2 teaspoons cinnamon
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups grated carrots
- 1 cup shredded zucchini
- 8 ounce can crushed pineapple, drained
- Chopped nuts and raisins, as desired
Mix together the sugar, oil, eggs and vanilla. Beat well.
Sift together the dry ingredients.
Gently fold the dry and wet mixtures together.
Fold in the carrots, zucchini, pineapple and nuts and raisins.
Bake in greased muffin pans in a 350 °F. oven for 25 to 30 minutes.
