- 2 quarts fresh blackberries, raspberries or blueberries (or a mixture of all three)
- 4 tablespoons melted butter or margarine
- 2 cups all-purpose flour
- 2 cups sugar
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups milk (whole or 2%)
Vanilla ice cream (or vanilla frozen yogurt)
Wash and stem the berries. Allow to drain thoroughly.
Pour the melted butter into a 2 quart rectangular dish.
In an electric mixer, beat together the flour sugar, baking powder, salt and milk until a smooth batter forms.
Pour into the buttered dish.
Distribute the berries evenly over the batter.
Bake in the center of a preheated 400º oven for 35 to 40 minutes or until crust is golden brown.
Serve warm with ice cream, if desired.
Serves 8 to 10.
