· 1 1/2 sticks butter
· 1 cup dark brown sugar
· 1/4 cup dark molasses
· 1 large egg
· 2 1/4 cups all purpose flour
· 2 teaspoons baking soda
· 1/2 teaspoon salt
· 1 1/2 teaspoons powdered ginger
· 1 teaspoon cinnamon
· 1/4 teaspoon powdered cloves
· 1/4 teaspoon ground mace or nutmeg
· 1/2 teaspoon allspice
· 1/2 teaspoon black pepper
· 1/2 teaspoon chili powder
· 1/2 cup crystallized candied ginger (2-3 ounces)
Beat butter, brown sugar, molasses and egg until fluffy and well combined, about 5 minutes. Put rest of ingredients in food processor and pulse until candied ginger is chopped fine, but not powdery. Slowly add dry ingredients to butter mixture. Beat on low until combined.
Grease cookie sheets. Make small balls of dough (about 1 teaspoon). Bake at 375 degrees for 8 minutes for soft cookies, 10 minutes for crisp cookies.
Makes 60 small cookies.
