· 1 c. sugar
· 2 large eggs
· 1 c. canned pumpkin
· ½ c. oil
· 1 c. flour
· 1 t. cinnamon
· 1 t. baking soda
· ½ t. baking powder
· ½ t. salt
Beat the sugar and eggs until very fluffy.
Beat in the pumpkin and oil on low speed.
Blend or sift together the dry ingredients and beat into the pumpkin mixture….beating for only 1 minute.
Pour into a greased 9” square baking pan.
Bake in a 350 °F. oven for 25 to 30 minutes.
Frosting:
· ¾ c. powdered sugar
· 4 T. softened cream cheese
· 2 T. softened butter
· ½ t. vanilla
Beat together all ingredients in a food processor or electric mix.
