• 5 cups peaches
  • 2 tablespoons fresh lemon juice
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon each nutmeg and mace
  • 1 teaspoon cinnamon
  • 2 cups sugar
  • 1 cup whole milk
  • 5 tablespoons softened butter
  • 1/2 teaspoon vanilla
  • 2 tablespoons cornstarch
  • 1 1/2 cups boiling water

 

Arrange the peaches in a 13X9” baking dish.  Sprinkle with lemon juice.

Mix together the flaour, baking powder, 1/2 teaspoon of the salt, spices, 1 cup of the sugar, the milk, butter and vanilla  to make a batter.  Spread over the fruit.

Combine the remaining 1 cup of sugar, 1/2 teaspoon salt and 2 tablespoons cornstarch.  Sprinkle over the batter and pour over the boiling water.

Bake in a 350 °F. oven for 1 hour.
