The Cake:
  • 1 package devil’s food cake mix
  • 4 eggs
  • 3/4 cup vegetable oil
  • 1 package dark chocolate instant pudding
  • 1 teaspoon vanilla
  • 2 cups sour cream
  • 1/3 cup Kailua
  • 6 ounces semi-sweet chocolate chips
 Beat together all ingredients, except chocolate chips for 3 to 3 minutes.  Fold in the chips.Put into a 13 X 9” baking pan and bake for 45 minutes at 350°F. Cool. Coconut Frosting
  • 15 ounce can cream of  coconut
  • 8 ounce cream cheese, softened
  • 1 stick butter, softened
  • 2 1/2 cups powdered sugar
  • 2 cups sweetened flaked coconut
  • 1 teaspoon vanilla
Beat the cream of coconut with the cheese and butter until very fluffy.  Beat in the sugar and stir in the coconut.  Cover and chill for 1 hour.  Frost cooled cake.
