• 8 boneless, skinless chicken breast halves

 

  • 3 tablespoons lime juice

 

  • 3 tablespoons fresh orange juice

 

  • 1 teaspoon lime zest

 

  • 2 teaspoons orange zest

 

  • 2 tablespoons minced ginger root

 

  • 1/4 cup chopped cilantro

 

  • 2 tablespoons honey

 

  • 2 tablespoons vegetable oil

 

  • 1/2 teaspoon cayenne pepper

 

  • 2 teaspoons kosher salt

 


Slices or orange, lime and cilantro sprigs for garnish

 

Flatten chicken between 2 sheets of plastic wrap.

 

Stir together the marinade ingredients and pour into a gallon size reclosable plastic bag. Add the chicken and marinate for at least 1 hour….as long as 3 hours.

 

Grill over a hot grill, turning once for 5 to 6 minutes on the first side and 3 to 4 minutes on the second side, or until browned and cooked through. (Do not overcook.)

 

Serve hot or at room temperature with the fruit salsa on the side.

 

Garnish before serving.
