• 1 large, ripe mango, peeled and diced
  • 1/4 cup olive oil
  • 3 tablespoons fresh lime juice
  • 3 tablespoons rice vinegar…or 1 tablespoon white wine vinegar
  • 1 tablespoon paprika
  • 1 teaspoon sugar
  • 1/4 teaspoon cayenne pepper
  • 10 ounces  mixed baby lettuces
  • 1 cup peeled and diced jicama
  • 1/2 cup salted cashews
 Puree half of the mango with the oil, lime juice, vinegar, paprika, sugar and pepper.Toss the lettuces with the remaining mango and jicama.  Toss with enough of the dressing to coat and top with the cashews.
