- 8 large tomatoes, peeled and sliced
- 1 1/2 teaspoons salt
- 1/4 teaspoon pepper
- 3/4 teaspoon chopped fresh thyme
- 1/3 cup chopped flat-leaf parsley
- 1/3 cup chopped chives
- 3/4 cup olive oil
- 1/3 cup tarragon vinegar
Place tomatoes in a dish. Mix remaining ingredients and pour over. Allow to sit at room temperature for 2 hours.
