Mary Jo’s Salmon Tartar

cup capers, drained
8 ounces good quality smoked salmon
2 tablespoons chopped fresh dill
2 tablespoons extra-virgin olive oil
1/2 teaspoon lemon zest
1/4 cup finely diced red onion
In the food processor pulse together all ingredients, except the onion.
Remove from the processor bowl and fold in the onion.
Chill until ready to serve.
Serve spread on toast or crackers.
