•   1/4 cup olive oil
  •   1 tablespoon sea salt
  •   1 teaspoon freshly ground black pepper
  •   2 tablespoons fresh lemon juice
  •   1 teaspoon lemon zest
  •   1 tablespoon chopped fresh rosemary leaves
  •   3 large cloves garlic, minced
Blend well and rub into the surface of a well-trimmed pork loin. Cover tightly and chill for 24 hours before roasting or grilling.
