- 6 cups water
- 6 cups canned chicken broth
- 1 cup dry white wine
- Neck from turkey (and giblets, if desired)
- 1 bay leaf
- 3 large sprigs each parsley, thyme, sage and rosemary.
- 1 cup coarsely chopped celery, with leaves
- 1 cup coarsely chopped onion
- 1 large carrot, coarsely chopped
- 1 teaspoon black peppercorns
Bring to a boil in a large pot. Simmer, uncovered, for 2 hours. Strain through a fine sieve. Season with salt to taste.
